Shrimp are a versatile ingredient and a relatively quick cooking option for weekday meals. With calcium, iodine, and omega-3 and omega-6 essential fatty acids, important for brain and immune system health, shrimp are often the most affordable and readily available shellfish in local markets. . Choose Wild American, Large or Jumbo Shrimp for the following recipes. Peeled and deveined shrimp can be purchased for a shortcut. With just 60 calories for a 3-ounce serving, shrimp are also relatively low in calories.

Grilled shrimp

24 jumbo shrimp (about 2 pounds), peeled and deveined with the tail intact

2 garlic cloves, crushed

1 teaspoon of Greek oregano

1/4 cup Greek extra virgin olive oil

2 tablespoons of fresh lemon juice

Greek sea salt and freshly ground pepper, to taste

Combine shrimp, garlic, oregano, oil and lemon juice in a large baking dish or bowl. Cover and refrigerate, stirring occasionally, for 30 minutes. While the shrimp marinate, soak 8 wooden skewers in water for at least 20 minutes, or if you prefer, metal skewers can be used without the need for soaking.

Preheat the grill to medium-high. Skewer the shrimp and season with salt and pepper to taste. Grill until the shrimp are opaque, about 3 minutes per side. Serve with a salad like the following which is topped with walnut vinaigrette.

Salad with walnut vinaigrette

2 cups grated romaine lettuce

1-2 medium tomatoes, chopped

1 small red onion, chopped

1 cup chopped raw kale

1 cup of shredded red cabbage

1 cup of arugula, watercress or baby spinach

1 medium red pepper, sliced

2 small cucumbers, chopped

1-2 medium carrots, grated

For the walnut vinaigrette:

1/4 cup red wine vinegar

1/2 cup of water

1/4 cup walnuts

1 clove of garlic

2 teaspoons of Dijon mustard

1/4 teaspoon dried oregano

Greek sea salt and freshly ground pepper to taste

Add the vegetables to a large bowl. To make the dressing, combine all the ingredients in a blender or food processor and blend until smooth. Season with salt and pepper to taste. Store leftover dressing in a tightly covered container in the refrigerator for later use. Add two tablespoons of dressing per person to the salad and mix. Serve immediately, garnished with cooked shrimp.

Garlic Shrimp

2 pounds shrimp, peeled and deveined, tail left, if you prefer

4 tablespoons Greek extra virgin olive oil

3-4 garlic cloves, sliced

A pinch of red pepper flakes

1 tablespoon of dried oregano

Salt and freshly ground pepper

1 medium lemon, zested and squeezed

2 tablespoons of chopped fresh parsley

Cooked rice

In a large saucepan over medium-high heat, cook the garlic in olive oil for 1 minute. Add the red pepper flakes, oregano, shrimp, salt and pepper to taste. Stir in the lemon zest and juice and continue cooking over medium heat. Cover the pot, reduce the heat and simmer until the shrimp are cooked through. Sprinkle with chopped parsley. Serve immediately over cooked rice, bulgur or pasta with fresh bread and a side salad.

Red Wagon Burgers & Fish Restaurant review – The Suburban Times

At the Red Wagon in Tacoma, I had to fold a piece of fish in the take out container to make it fit so I could close the lid. A recent commentary on food in one of my articles in The Suburban Times had a reader’s remark about the Red Wagon Burgers, but it wasn’t about the burgers. The comment was about the large portion of fish in the Fish and Chips served there. I came back from there with a piece of fish to take away for my wife. She loved it. . . there was enough to share. . . always.

Peg and I ate at Red Wagon in Westgate when it opened in 2016. The oysters were nothing to write home about. Peg had a mushroom burger, which she enjoyed and wished I had ordered. Our friend Donna also enjoyed her burger. Peg shared a bite. It was good, but a gourmet burger? I do not know. I have had as good or better at other restaurants. The Gourmet Burger Shop in Gig Harbor is better, but to be fair they cost around four dollars more but seem so worth it. The Spanky Burgers on Sixth Avenue in Tacoma are also a favorite stopover for a late lunch or early dinner.

We’ve shunned Red Wagon for five years, even though we get Valpak coupons every month offering a gourmet Cheeseburger meal for just $ 8.75 with fries and soda.

To celebrate the immunizations and vaccinations, my buddy Jim Harris and I renewed our monthly lunch. I picked Jim up from his house and made my way to Red Wagon on North Pearl purely based on a reader’s commentary on much of Fish and Chips. I ordered the fish combo, which included two oysters, two shrimp, and two pieces of fish. The oysters were small and ok. Of course, I had just had dinner at Anthony’s for their Oyster Fest the night before, so it wasn’t fair to compare the two. The shrimp were straight instead of curly and better than the oysters. The fish now. . . This is an other story. There were two pieces. The smaller room was about the size of a men’s flap wallet. . . a plush wallet. I should have asked for a lemon wedge, but I ate the fish little by little. Jim managed to eat all of his burger (seemed a bit rare to me, but I didn’t hear the order). I was surprised.

Red Wagon has restaurants in Tacoma, Puyallup, and Tumwater. I don’t know why they aren’t in Lakewood, Tillicum, DuPont, or Lacey. It would seem natural in each of these places. – redwagonburgers.com

Red Wagon offers a small space. Currently there were only two tables for eating. Most of the tables were blocked off to allow standing (spaced) people to line up to order. Jim noticed the very beautiful and colorful cartoon on the walls. There is a lot of red of course, but the art was awesome. We had excellent service from Natasha. She was very helpful and made sure we were comfortable and had everything we needed. The fries were good. The second piece of fish is the one I had to fold to fit in my “take out” styrofoam holder. At home, I laid out a plastic ruler to check the size. Straightened, it was over nine inches long, and its width was just over two inches at about four. Reheated with a squeeze of lemon and Red Wagon tarter sauce, it was always very tasty. Peg even saved a bite or two for a late-night snack for herself. I will come back with Peg and try their other seafood offerings! We’ll probably even try their burgers again,

Big Fish Restaurant Group buys Striper Bites

Striper Bites, a staple restaurant in downtown Lewes for 20 years, will soon become the property of the Big Fish Restaurant Group.

Big Fish president and managing partner Eric Sugrue confirmed in an interview on March 8 that his group will take over restaurant Savannah Road, opened by Matt and Ali DiSabatino in the summer of 2001.

“Matt and I have been friends for a long time,” Sugrue said. “This whole affair has proceeded in a friendly manner. We met behind closed doors for over a month and we came to an agreement. He decided to start a new chapter in his life, so he was looking for someone to continue the legacy.

Sugrue said the transition will take place over the course of weeks or months – there is no firm date on which the transfer will be completed. He said his team was already in the restaurant working with managers and staff.

“For 20 years, we have created a brand that has become synonymous with Lewes,” said DiSabatino. “We are a very community driven bar and restaurant with amazing clientele and amazing colleagues.”

DiSabatino said it was important to him that Sugrue and Big Fish honor the foundation he and his wife have built over the past two decades. Sugrue agreed, saying he doesn’t anticipate any major changes and that the name will stick.

“We keep the charm,” he said. “That’s what we love about it. We want it to stay the same. “

It’s the first restaurant the Big Fish Group owns in Lewes, a town, Sugrue said, they’ve been trying to get into for a long time.

“It’s a big city,” he says. “We see it as our backyard. We have a strong presence in Rehoboth, so Lewes is a natural fit for us. It took a while to find the right deal. It’s like it’s meant to be. It feels good.

Norm and Eric Sugrue opened the first Big Fish Grill restaurant in 1997. They have since expanded to over a dozen restaurants in Delaware, including several in the Lewes and Rehoboth area. Popular restaurants in the Cape Town area include Summer House, Salt Air, Crab House, Stingray Sushi Bar, Obie’s By The Sea, and Sazio.

DiSabatino said he will continue his roles as part owner with Lewes Half Full and Kindle restaurants.
